Rufus' Food and Spirits Guide

This is a fairly simple dessert that makes use of apple guts in the stuffing. It also takes advantage of melted brown sugar as a tasty internal sauce.

This recipe is for two but can easily be increased for as many people as needed.

Stuffed Apples with Apples

  • 2 large semi sweet apples
  • 1/2 cup chopped almonds
  • 1 star anise
  • 1/4 cup brown sugar
  • 1 tsp mace
  • 2 tbsp Lillet Blanc (or fruity white wine)

Using a sharp knife slice the tops off each apple and hollow out the inside cavity leaving 1/8″ of flesh intact. Remove core and seeds from guts and cut into small dice. Spoon 1 tbsp brown sugar into each apple, cover with the tops and bake in a greased dish at 350 degrees until apples begin to change color and brown sugar melts, about 15 minutes.
